Salted Cocoa Peanut Butter Balls

YIKES I had too many of these yesterday.
Although, considering my committed relationship with peanut butter, I shouldn’t act so surprised.
Plus, my husband is in Ireland this week, and I get myself into trouble while he’s gone.  Things like rearranging all the furniture, watching chic flics, going to bed early, obsessively cleaning the apartment, and eating peanut butter balls for dinner.
A rebel, entirely, I know.

SALTED COCOA PEANUT BUTTER BALLS
1/3 cup peanut butter (unsweetened)
1/4 cup honey
1/4 tsp Himalayan sea salt (+ extra to sprinkle)
2 TBSP cocoa
1 cup oats

Add the oats last.  It just works better that way.
Roll into balls and lay on a tray, lined with parchment paper. Sprinkle extra crystals of salt.  Himalayan Sea Salt is pretty pretty. FYI.

Set in the freezer for 15 minutes (or 30 min in the fridge)

They keep really well in the fridge, staying firm and chewy. Little power protein nuggets that taste like heaven!
