Creamy Sandwich Spread

Hello! and TGIF :)

I hope you’ve all had a fantastic week!  I have a little recipe to share before we all kick off the weekend.
I made this delicious sauce to spread on a sandwich. Any sandwich.

Use beaters or a whisk for the following ingredients:
– 2/3 package of cream cheese (softened)
– 1-2 TBSP half & half (to desired consistency)
– 2 stalks of green onion, chopped small
– 1 cup chopped frozen spinach
– 1 tsp pressed garlic
– 1 & 1/2 tsp chopped dill
– 1/8 tsp salt
– 1/4 tsp pepper

Spread this on your burger or any sandwich of choice, for a delicious meal!   I cooked Trader Joes salmon burgers this week.

We also used the spread on open faced baguette grilled turkey sandwiches. THAT was mmmm too.

Additional announcement… somebody had a birthday this week. He turned 26!

I caught a cold the day before his birthday, so you can imagine how great my serenading of “happy birthday” sounded, Tuesday morning.
Two rules I broke in that moment: 1.) never sing when you first wake up. 2.) definitely never sing when you have a cough.
