Clean Quinoa Bowl

It’s Day #3 of this Standard Process detox — a 21 day spring-cleaning for the body.
How’s it going, you ask?  I MISS COFFEE AND BREAD AND CHEEESE!

Ok, but optimistic Glorie says it’s actually going great considering the first 5 days are the hardest.  It definitely requires a lot of meal planning and preparation.  So over the weekend, while avoiding the cold weather, I stayed home binge-watching House of Cards and chopping vegetables.

Since carrots and apples don’t stick with you for long, a serving of quinoa is my saving grace.

// Clean Quinoa Bowl //
– 1 cup of quinoa  (I cooked it with 2 cups of water – or follow instructions on package)
– 1 TBSP olive oil
– juice from lemon (I did a partial squeeze from 1/2 lemon)
– 1/4 cup chopped red pepper
– 1/4 cup chopped zucchini
– 2 TBSP chopped cilantro (cause I LOVE cilantro – so 1 TBSP if you like cilantro:)
– 1/2 tsp salt
– 1/4 tsp pepper
