I love making omelettes! Mama taught me how to make them when I was still short enough to need a step-stool at the stove. I would enjoy the challenge of attempting the flip without ruining it – occasionally I would have a complete fail, resulting in unintentional scrambled eggs, played off, of course, as intentional:)
Brunch over the weekend was this 4 ingredient omelette. So simple and flavorful, I could not wait to share it!
3 eggs, whisked – with a dash of salt
1/4 cup feta cheese, crumbled
handful of kale, finely chopped
1-2 small tomatoes, sliced
Iron skillet. Medium heat. Oil or butter to avoid stick.
Whisk the eggs and pour them in. When it’s time to flip, you take that risk like it’s your job! You and your Spatula are a dream team – make it happen!
As soon as you flip it, layer up feta, kale, tomato, (reverse) kale, and feta again on top. Turn the flame off.
Fold it over and cover the pan for 3ish min so the kale will soften and your cheese can melt a bit.
It’s breakfast, lunch, or dinner:)
