Melted Oven Sandwiches with Spicy Dill Mayo

We are leaving for Italy soon – hooray! – so I will be disappearing for a couple weeks, once again.  But before we depart to Europe, to share more of my tiny kitchen discoveries with you, I thought what better way than with a sandwich.

A sandwich is a really great thing, particularly when an oven is involved.
Am I right? Just look at the gooey cheese here, and I am right.
I love being right.

You can start by making my Homemade Spicy Dill Mayo!  I bought fresh dill from the market, which is what inspired this mound of yum.

*Spicy Dill Mayo
1/3 cup mayo
2 TBSP fresh dill, chopped
1 TBSP Cholula hot sauce
1/2 tsp pepper
1/8 tsp salt
1/2 tsp garlic powder

Ingredients:
4 soft rolls, sliced in half
8 slices, provolone cheese
sliced chicken or turkey meat
2-3 tomatoes, sliced thin (optional)
Homemade Spicy Dill Mayo (*see recipe)

Stack 2 slices provolone cheese, 4-5 slices deli meat, 2 slices tomato, and spread the homemade mayo as proportional as you like it!

Wrap the sandwiches in a foil and place in a preheated oven at 350 degrees for 20-25 minutes.

Excuse the empty-ish glass. This photo demonstrates that I drink WHILEST I cook:) You are invited to do the same.

Ciao!  Off to the land of pasta, pizza, and wine…
Have fun cooking and experimenting in your own tiny (or large) kitchens, while I’m gone!

from my Tiny Kitchen,
