The holidays spent with our families in Colorado were full of laughter, love, and delicious food. Worthy calories, indeed:)
But the aftermath leaves you craving basically anything that grows on a tree, or anything that ends with the word salad. This is a simple bean salad I made this week, bursting with flavor thanks to the feta and olive oil, two of my favorite Mediterranean flavaas. Now, I love cilantro. With that fresh taste I could put it on anything – BUT to some people it tastes like soap (no really, theres been studies about this!)
So if you find you are one of those people, feel free to substitute the cilantro for spinach or kale.
INGREDIENTS:
2 cups garbanzo beans (rinsed and drained)
1/4 cup crumbled feta
4-6 sprigs cilantro (leaves) chopped
1/4 tsp salt
1-2 TBSP olive oil (I used only 1, but it could’ve used more! – up to your preference)
It is a meal all by itself! I hope you enjoy.
Happy 2016, from my tiny kitchen,
glorieanna
