Roasted Greens

Been cooking a ton lately. Simple things. Like roasted vegetables. This is my absolute favorite way to eat zucchini.. errr second to Zucchini Bread, OF COURSE.

GREEN
Start with preheating your oven to 375.

ROASTED GREENS
3 medium zucchini, long sliced
1 bundle asparagus, bottoms chopped
2 shallots, peeled, sliced thin
3 TBSP olive oil
2 tsp salt
2 tsp dried thyme
1 1/2 tsp pepper

Mix it all together in a bowl. Processed with VSCOcam with f2 preset Pour into a baking dish. Processed with VSCOcam with f2 preset Bake at 375 for 25 minutes. At this point you’re gonna pull it out and stir.
Then bake for an additional 25 minutes. (*Total bake time is 50-60 min)

The thyme and shallots make the magic!

We actually had this as an entire lunch, but it makes a great side dish for dinner!
