Been cooking a ton lately. Simple things. Like roasted vegetables. This is my absolute favorite way to eat zucchini.. errr second to Zucchini Bread, OF COURSE.
Start with preheating your oven to 375.
3 medium zucchini, long sliced
1 bundle asparagus, bottoms chopped
2 shallots, peeled, sliced thin
3 TBSP olive oil
2 tsp salt
2 tsp dried thyme
1 1/2 tsp pepper
Mix it all together in a bowl. Pour into a baking dish. Bake at 375 for 25 minutes. At this point you’re gonna pull it out and stir.
Then bake for an additional 25 minutes. (*Total bake time is 50-60 min)
The thyme and shallots make the magic!
We actually had this as an entire lunch, but it makes a great side dish for dinner!
