Strawberry Rejuvenation Smoothie

Happy Saturday, you sleepy heads.

Don’t you just love mornings?  Even my night-owl husband says “I wish I loved mornings.”  Haha, with this internal contradiction, he tends to burn the candle at both ends.
I suppose it’s a general love of ‘being awake’. Can’t have it all.

I find mornings incredibly peaceful and serene, a new gift, a space to take time for thankfulness, mindfulness, and even the anticipation for that beloved comforting hot beverage.

Typically, the first thing I do when I wake up, is drink a full glass of water. (a learned habit from Cameron Diaz, in The Body Book. A great read!)
Then on goes the kettle for tea or coffee; and next of course, is a nourishing breakfast!  It’s possibly the most unsung hero of any day.

Today, I’m sharing my newest breakfast smoothie!
I just can’t get enough. It is packed with whole foods, not too complicated (great when you’re in a rush), an energizing and clean way to start the day!

INGREDIENTS:
2 cups frozen strawberries
1 & 1/4 cup coconut milk or almond milk
1/4 cup pecans
1 TBSP chia seeds
1 TBSP flaxmeal
3 dried Turkish figs (pluck stems off)
coconut flakes to garnish

Chia seeds might be tiny, but they are an astoundingly nutritious superfood packed with protein, fiber, omega 3 fatty acids, and a plethora of micronutrients.

And then there’s flaxmeal, (ground flax seeds)…also rich in antioxidants, omega 3 fatty acid..the list goes on!  I’m often tossing it onto whatever I’m eating: soups, salads, smoothie, rice bowls,… it doesn’t have strong flavor so it’s easy to mix.

And don’t get me started on figs!  Potassium, vitamin B6, fiber.. seriously. Figs.

Sprinkle the coconuts to pretty-up your cup.

Strawberry Rejuvenation Smoothie

  • Servings: 1
  • Difficulty: easy

Refreshing, nourishing, and satisfying, this superfood breakfast will give you a natural energy to start any day.

Ingredients

  • 2 cups frozen strawberries
  • 1 & 1/4 cup coconut milk or almond milk
  • 1/4 cup pecans
  • 1 TBSP chia seeds
  • 1 TBSP flaxmeal
  • 3 dried Turkish figs (pluck stems off)
  • coconut flakes to garnish

Directions

  1. Blend all ingredients for approx. 1 min or more, until smooth.
  2. Blenders vary:  add extra liquid as needed.
