Leah’s Pumpkin Vegan Muffins & My Poetic Tribute

Today’s post is brought to you by my sister, Leah Nicole. The girl came up with these vegan yummers a few months ago. She’s not vegan. In fact, neither of us are. Heck, I eat eggs almost e’ry day. But these muffins prove one thing. My sister rocks at just about anything she does.

Here’s her recipe “guess”. She and I must be from the same family because we both forget measurements when we make up recipes. Way to keep it classy, sis.

2ish c. oats
2ish c. flax meal
1/2 c. applesauce
1 & 1/3 c. pumpkin
1 & 1/2 c. honey or agave (more or less, depending on preference)
1/2 tsp salt
1 tsp. baking soda
2 tsp baking powder
2 tsp vanilla
1 tsp cinnamon
1 tsp Pumpkin Spice OR Allspice (more or less)

Mix. Put in greased small muffin tins. Bake at 375 for 12ish min. (if use Regular-sized muffin tin, bake for more minutes, until toothpick comes out clean)

{BEST recommendation: TASTE your batter before you bake them. You will get a good idea of if these measurements are to your liking.}
I like them less sweet, like a breakfast thing. Andy likes them more sweet, like a dessert thing. Find what’s perfect for you and don’t put too much pressure on yourself. If they don’t turn out perfect, you can spread some jam or butter on it, nuke it for 10 seconds and all your baking mistakes will be as far as the east is from the west.

Be SURE to devour at LEAST one of them right out of the oven.

And here, we have a poetic tribute written for my beautiful sistaaa.
Roses are red, you’re eyes are blue.
We’re two years apart; last was me, first was you.

We’d play in the yard, digging up dirt and worms,
Catch big fireflies, and shoot hoops taking turns.

Homework was impossible when I was with you,
We’d chat and we’d laugh and we’d talk like girlfriends do.

You taught me to cartwheel left-handed, you see.
You taught me to sing, ride my bike, and be free.

Kindergarten first, braces first…
In bravery, sis, you were certainly well versed

We’re adults now its crazy, life happens so fast.
More than sisters, we’re friends; its our future, its our past.
