SUPERFOOD Breakfast : Kefir + Chia Pearls

My handsome Italian man and I, had a date day in Denver on Thursday. We felt like two kids galavanting around the city, drinking free sangria during happy hour at the boutiques, trying on fedoras and beach hats, racing to add money to our parking meter {as usual}, eating hot soup under the twinkle lights on Larimer street, and snapping an unnecessary amount of photos.

Hey, all you yogurt loving peeps. Kefir may be your new best friend.
Here’s the honest truth: Over the last few years, I’ve avoided most dairy products – we usually go for almond milk, rice milk, & I like goat cheese/yogurt…although Andy won’t touch goat with a 100 ft pole.

Anyways..in regard to our 90% dairy avoidance, there are some exceptions! For example, my mother-in-love introduced us to a nifty combination recently that she sampled at Whole Foods, so she generously bought us all the ingredients for it, as a gift. She’s the sweetest.

I like to call it Kefir & Chia Seed “Pearls”. This is the how-to!

If you’re going to have this for breakfast, on the evening prior, here are your instructions:

  • 1 cup of plain kefir
    (p.s. You can do vanilla or other flavor if you prefer)
    (p.s.s. I’m a huge goat-dairy advocate – you can also use goat kefir for this recipe!)
  • 1 TBSP of chia seeds.

Mix that together, real good. Let it sit overnight in the fridge – that’s the best way! (or 15-20 minutes will work, in a pinch)

  • In the A.M., pull it out of the fridge and add honey, nuts, cinnamon, blueberries, granola, flax, banana,…put it all in. Whatev is clev. Whatever floats your boat. Whatever stokes your folks. Whatever puts cream in yo coffee.

Here’s the cool part… those little friendly chia seeds will grow into balls, just shy of the size of a dip-n-dot.  It kind of reminds me of a way-smaller-version of the tapioca boba “pearls” in Boba Tea.
