Glo’s Breakfast Bundles

It’s Saturday morning. I LOVE Saturday mornings. I just made these Breakfast Bundles!

Again, we’re overdue for groceries, so I pulled out these few things from the fridge to try and bake an eggy thing.

  • Grands Biscuits, Turkey Sausage links, Tomato, Egg, Cheese.

Yes yes, I’m fully aware that buttermilk biscuits are not the healthiest biscuits around. But they make a really good breakfast bundle:) There are healthier options for bake-able bread dough. Use whatever kind you prefer!  Before baking, just roll it out into a hand sized circle of dough to press into each large muffin baking dish.  Grands don’t require you to grease the muffin pan – other breads do.

Preheat oven to 350.

  • chop up about 3 Turkey Sausage links into tiny bite size, sautée them on stove top (mine were size of like a hot dog – if your links are smaller, use more)
  • chop a couple fresh roma tomatoes. (try to take out the wet/gooey part so the muffin isn’t too wet)
  • beat about 4 eggs together with approx 1/2 cup shredded cheese. Add salt and pepper!

Divy up the cooked sausage into all the dough cups in the muffin tin. Sprinkle tomato on top, then use a ladle to pour the egg cheese mixture into the centers. Don’t overflow them too much! These are already going to bake into big fluffs:)

Now sometimes, my oven is whack. So do not believe me when I say to bake something at 350 for 20 minutes.

Bake these at 350 for 20 minutes.
(or until the top egg mixture is no longer raw)

These are so yummy for breakfast!

There’s this pizza restaurant in Colorado that has a ridiculous amount of crust – it’s REAL good crust – but it’s a lot.  So they give you honey to drizzle on the crust, once yo pizza part has disappeared.

We did the same with our doughy crust this morning.  Honey in my tummy.
