Grilled Zesty Pinwheels

Because snacking is more fun than eating a meal, an appetizer is brought to you this day.

So my mom used to make pinwheels for parties. It’s basically flour tortillas, cream cheese, a few chopped veggies and seasoning. Spread it on. Roll it up. Slice it. Serve.  Always delicious.

I took a different spin on those little “roly poly’s” as my dad calls them.  I changed the cream cheese base ingredients, grilled each side of the pinwheels, and served hot instead of cold.  I’ve served them at three different parties so far…lots of “yums” followed.  My guinea pigs didn’t even know they had such a crucial role for this post:)

This is all you need:

  • flour tortillas
  • 1 package cream cheese (softened)
  • 1/4 tsp. garlic powder
  • 1/4 heaping tsp. chili powder
  • 1/4 tsp. salt
  • 1-2 green onions, chopped small
  • 1/2 cup black olives, chopped small
  • 1 tomato, chopped small
  • 3/4 cup shredded cheddar cheese
  • dash of black pepper

Take a stack of flour tortillas, wrap with damp paper towels, covering entirely. Warm in microwave for 15-20 seconds so they’re soft for rolling. Cold shells are more difficult to roll. Just don’t overheat them or they will be hockey pucks. Consider yourself warned.

Mix all the remaining ingredients together. Spread a generous layer on a tortilla, roll it up. Place them all on a plate and refrigerate for at least 20-30 minutes. If you don’t have time, set them in the freezer for 5-10 minutes. This helps them harden, making them easier to slice. Slice them in 1-2 inch thick rolls. Since they have weird edges, I usually just toss the ends.

On the stove top, lightly oil or butter a frying pan to prevent sticking. On medium heat, lay the rolls flat on one side. It only takes a few minutes for the cheesy mixture to start browning. Flip them over to hit the other side. Done!
