While trying to make these little bites come true this month, I failed three times. They just weren’t working. One batch tasted great, but fell apart into a million pieces the moment you picked it up. It was easier to eat it with a spoon, like cereal:/ I even started saying stuff like “hashtagFAIL” out loud. #weird.
BUT last night, these fluffy GLUTEN-FREE / DAIRY-FREE / OIL-FREE morsels, emerged from the oven. And so did the smile of contentment on my face. They finally worked!
I created these initially, because I’ve been doing a temporary cleanse-ish-clean-eating thing. Basically eliminating white sugar, white flour, pasta, bread, etc..
But why. Please tell me why, the minute you decide to avoid certain foods, that’s when you actually crave them. Arrgh. I wanted to bite into a chocolaty doughy something.
Well..we did it folks. And my craving was met with delight.
But rest assured, when it comes to “sweets”, these are as healthy as it gets. And I LOVE them for breakfast with coffee. Do try.
Gluten Free Cocoa Mini Bites
- 1 cup Almond Flour
- 1/4 cup Teff (fun fact: smallest grain in the world)
- heaping 1/4 cup Unsweetened Cocoa Powder (I used Carob)
- 1/4 tsp Baking Soda
- 3 Eggs
- 1/3 cup + 1 TBSP Honey
- 1 1/2 tsp Vanilla Extract
- 1/4 cup Applesauce
Preheat oven 350. Mix. Grease tiny muffin pan. Spoonfuls in each. Bake 18 minutes.
Once they cooled, I drizzled warm honey over the top and sprinkled them with crushed pecans. I mean, WHY WOULDN’T I.
No butter, sugar, dairy, or flour. Say WHAAA. I no lie.
