Hummus Avocado Sammie

I’m sitting on the front porch again. It’s a beautiful day here in Colorado Springs.  Not many days left in this paradise, for us.  We’re NYC bound in less than a month now. Incredibly excited as the time approaches, but definitely trying to soak up the goodness of CO before we go.  ‘Sad’ and ‘Happy’ don’t mix well:)  It’s confusing to feel both at the same time.

Anyways, back to biz!

I made a really good sandwich, guys.

Start with a Focaccia Roll, sliced buttered, and broiled open face for 2 min.
Smother it with Roasted Red Pepper Hummus (2 TBSP?)
1 slice of Aged Cheddar Cheese
1/3 cucumber, sliced
1/2 avocado, sliced
about 3 sprigs of Cilantro
salt / pepper / crushed red pepper



Now go outside and enjoy that sunshine!
