I’m sitting up in bed right now, while an August breeze, much resembling Fall, blows through our windows. The sun isn’t up yet, but the sky looks dimly peach. I listen to the quiet in here, while the buses, cars, chatter, and foot steps echo out there.
It’s Monday morning.
Our friends, Adam and Morgan, from Colorado, have been staying with us for the weekend! They are some of the most exceptional human beings on the earth! We stayed up late every night, in true weekend form, so everyone is snooozin’. I’ll be heading off to work soon. We had a fantastic time, from Brunch double dates, to ferry rides, to late night rooftops, and soccer at the park. Explorations of the city are endless!
Today, I have a recipe to share that makes me think of my mama’s garden. Growing up in Indiana, I had the “luxury” of helping her plant and harvest two HUGE gardens. My sister and I had terrible insect encounters in her garden. Never thought I’d say it but I miss those gardens. The flavors of her fresh produce compared to none.
To celebrate those garden flavors, I created an easy tossed tomato salad!
Pesto Cherry Tomato Toss
2 dry pints of cherry tomatoes (I used Jersey sweet grape tomato, and golden grape tomato)
1 TBSP olive oil
2 tsp pesto
1 tsp minced or pressed garlic
2 stalks of green onion, chopped
salt to taste
Halve your tomatoes
Add all the ingredients and toss it together! It’s delicious!
