We survived the Snowpacolypse last week here in Brooklyn. The weathermen gave us an itty bitty exaggeration of snowfall, and the grocery stores are richer for it. Central Park snow accumulation added up to 7.8 inches, and it was pretty. We hit the neighborhood for a walk and to snow fight. It was swell.
Having the day off tickled me pink, and being snowed in is a great time for baking. (excuse the messy kitchen!)
Today is just a little tip on shnazzing up any banana bread recipe. Originally I learned it from my friend Mel –> shes the best host and makes the best food.
Shnaz tip 1: Stir in 1 cup frozen blueberries to the batter, after mixing. Then pour your batter in your greased bread pan.
Shnaz tip 2: Sprinkle the top with unsweetened coconut flakes
Sprinkle the flakes just before baking.
