It varies, you guys. Sometimes I make healthy stuff. I mean, butter, flour, cream, and sugar – they win. They just like to win.
But once in a while, a healthy creation makes it’s way through my measuring cups and mixers, and merge from the oven with humble triumph.

Vegan GF Banana Bread Nuggets
1 cup almond pulp * (see here for homemade raw almond milk – which yields almond pulp :))
1/2 cup GF oats
1 banana, mashed
1 TBSP coconut oil, melted
3 heaping TBSP honey, slightly melted
1/2 tsp cinnamon
* the pulp should be refrigerated, and used within 2 days.
Mix the wet separately from the dry. Then mix it all. Spoon them on a baking dish.
Bake at 350 for 20-25 minutes.
Cute lil’ nuggets, but don’t get too attached. They have a short life span of 10-15 minutes, if there are > two people in the room.
