Creamy, sweet, smooth, thick, melty, DAIRY-FREE?!?! How could this be?!
This Coconut Cream from Trader Joes is the good stuff. I’ll start off by saying that because some brands of coconut cream yield higher amount of coconut water vs. actual cream in the can.
Although I’m not vegan or dairy free, I have lots of friends and family with allergies or intolerances. This dessert is basically vegan, except that technically honey is not vegan.
SO, if you’re dairy-free this is a totally-legal-but-feels-so-naughty dessert!
Pull out your beaters and whip up all of these things for 2-3 minutes –>
COCONUT ALMOND MOUSSE
14 oz can of Trader Joes Coconut Cream (scoop out the cream, leaving liquid in the can)
1/4 cup raw unsalted almond butter
1/4 cup honey
1/8 tsp vanilla
1/4 tsp cinnamon
Cover and refrigerate for at least an hour!
Smooth and creamy, your Coconut Almond Mousse can be served in pretty champagne glasses with a sprinkle of cinnamon on top. Or it is absolutely delightful atop a bowl of fruit. I personally like it with fresh berries or fresh pineapple, YUM. (because coconut + pineapple is like paradise-pina-colada-business)
This mousse lasts for 3-4 days, in the refrigerator.
