Pumpernickel Toasts with Honey Feta + Plum + Microgreens

These. THESE. These are ridiculously good.
It’s not like I’m bragging, but I’m bragging just a little.

Really the feta cheese should be bragging, she did all the work here.

In other news, I grew microgreens!  From seeds! In my little window!

Typically, when plants see me coming, they scream, run, and hide.
But these gracefully sprouted up, and they are so dainty!  Edible garnishes, or tossed into a salad.

But in regards to our tasty toasts –> if you have bread, feta, honey, and some type of fruit, you’re ready.

PUMPERNICKEL TOASTS WITH HONEY FETA + PLUM

4 slices pumpernickel bread
1/2 cup feta
1 TBSP honey
1 pear
1 plum
handful of Microgreens (optional)

Cut each slice of bread in half, lightly butter each.
Thinly slice fruit, assembling as you wish.
Mix the feta and honey, smashing it up a bit with a fork. Put a bit on each toast.
BAKE at 400, for 10 minutes.

AFTER baking, toss a pinch of the cute greens on top!

Appetizers = the most fun food IMO.
