Prettiest little things, they are. Organic carrots of purple, yellow, and orange!
Hey sorry I disappeared for a bit! I went off galavanting the West coast with Andy for a couple weeks while he worked…loved it so much, but we’re also happy to be home, kicking off summer in the city!
Anyway, back to our rainbow carrots here. I got a 2 pound bag at Trader Joes.
My girlfriends and I took a field trip there this week.
Because TJ’s is an essential component of keeping both your refrigerator and your bank account stocked. And also because it’s fun to do something so ordinary and mundane with the people you love.
OVER THE RAINBOW ROASTED CARROTS
2 lb carrots, skinned/chopped
2 TBSP olive oil
1 TBSP thyme leaves
2 tsp salt
Toss the carrots with these 3 ingredients and bake at 45o for 15 min, leaving them both soft and lightly crunchy. (during bake time, stir them 1-2x)
