A raise of hands for anyone who likes cashew butter??? Stupid question, I know.
Well. Inspired by the wonder of cashew butter, coconut cream, and strawberries, this breakfast smoothie was created through trial and error a few times this week until I got the recipe just right, and I’m so pleased to share it today.
Delightfully creamy and Summer-ly satisfying. Let the happy tummies commence!
Andy indulges in the afternoon like it’s some sort of dessert. Must be fabulouus.
It’s a pretty light rose color, and I just basically love it.
ROSEY SUMMER SMOOTHIE
1 cup frozen strawberries
1 cup almond milk
2 TBSP cashew butter
2 TBSP organic coconut cream (canned) (Trader Joes has a good one!)
1 tsp cinnamon
3 dried figs (or dates)
Although according to the calendar it has not officially arrived, I’d like to say that Summer is here. It has been a gorgeous week in Brooklyn!
