Grill masters!!
I have a chicken recipe you should throw on your backyard grill ASAP.
I don’t have a grill, which is a sad fact. But I pretend on my stovetop.
Someday when I grow up I’ll have a grill. And a backyard.
After doing this marinade a couple times, I’ll hint that the longer it marinates, the better! A couple hours is fair enough, but overnight is when the flavors really do their job.
SUMMER GRILLED CHICKEN MARINADE
1.5 or 2 lbs chicken breast meat
1/4 cup olive oil
2 tsp red wine vinegar
3 garlic cloves, pressed
juice from 1 lime or lemon
2 TBSP honey
1 tsp salt
1 tsp pepper
1/4 cup green onion, chopped
*extra green onion for garnish after cooking
Mix the marinade ingredients together before pouring it atop the raw chicken. Cover and let sit for 3-4 hours or overnight.
If you use the stove top, like me, I recommend a safe nonstick pan with a lid for the splashys. But if you have a grill, by all means put it to use! It’s quite a bit more summery:)
After “grilling”, garnish with some chopped green onions. Crispy on the outside, juicy on the inside. Voila.
We usually slice it up for salad nights, but it’s also great with a side of sweet potato or asparagus.
