Call me crazy, but I love cabbage. And for those of you who don’t, give this recipe a try and you juuuust might.
- 1 cup of finely chopped cabbage
- 3 carrots, in food processor (yields 1 cup)
- 1/2 cup finely chopped raw spinach
- 1 green onion, chopped
- 1/2 cup parmesan cheese
- 2 TBSP flax meal
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/2 tsp garlic powder
- 2 eggs
Mix everything dry. Beat eggs together, and add last.
Place spoonfuls (pressed together so they stay together) on greased baking sheet.
Bake for 25-30 minutes. Before pulling them out, I turned the oven on broil for 1-1.5 minutes, only. It crisps them a bit more, BUT DONT WALK AWAY FROM THE OVEN. Hah. I learn these things the hard way, folks. With “broil”, 1.5 minutes is a whole lot different from 2 minutes. Just saying.
Between Andy and I, these 6 were gone within the first 10 minutes:) Enjoy!
