We’re only here at this apartment sublet until June 1, so we’re soaking up any chance we can to be up on the roof. (when it’s not raining of course)
This week, when making plans to eat up top whilst the sun set, we chose the dynamic duo dinner: pasta y vino :)
Dinner was 5 ingredients, m’friends.
- Bowtie (or any) Pasta, 12 oz
- Trader Joes Creamy Tomato Basil Pasta Sauce, 25 oz
- 2-3 cups fresh Spinach
- 5 mushrooms
- Grated Parmesan Cheese
Boil the pasta, saute the veggies, and heat the sauce. I used grapeseed oil for sauteing the vegetables, and added a dash of salt.
Mix everything together before serving, OR serve it separately, like “make your own pasta bowl.”
We popped open a cheap Cabernet Sauvignon, from TJ’s.
(There it is…”two buck chuck”. Actually it’s 2.99, but the title remains)
In my opinion, it tasted better than a cheap $6 wine from back home. #winning
